Wheat is a grass with a swollen grain which can be ground to produce flour for making bread and biscuits. It is the world's most important crop. It is versatile and can be sown in autumn or spring. Both sowing times are harvested in August. Due to climate, autumn sowing dominates in the UK, allowing the plant to grow through the winter producing a higher yield.
It is easy to harvest as it stands upright, the ears are threshed off leaving straw stems. The straw has relatively little value and it is mostly chopped up and spread by the combine. The UK currently produces around 15 million tonnes of wheat each year. Wheat is responsible for the daily production of 10 million loaves of bread. Cambridgeshire August 2005.
