Frying is a fast process; make sure your food is ready and prepared before you start. Then put a suitable frying pan on to heat up with a little oil in it. Make sure the pan is evenly heated through before you start frying, otherwise it will be too cool and the food juices will start to bubble out, making the pan even cooler. Then the food steams rather than fries.
