Brown and white sugars.

Raw sugar is brown in colour, it needs to be refined to make it white. Georgian society imported large quantities of sugar as part of the trade triangle, also involving slaves! Sugar usually arrived in the form of a sugar loaf. Pieces were nipped off and then ground by hand before use.
