Much cooking was done by 'eye', the cook used their experience to judge quantities, temperatures and when food was thoroughly cooked. Cooking in fire heated ovens and by the fire took judgement, as temperatures were not consistent. The Shrewsbury cakes are done when they are golden brown and firm.
