These pigs are going to be used as show pigs and are kept separate from the other pigs. Gloucestershire Old Spots is now a rare breed. It is a traditional breed suited to extensive farming. However it is gaining a niche market due to the flavour of the meat that the pigs produce. There are differences between pig breeds but most especially between traditional breeds such as the GOS and modern hybrids used to supply the mass food market. Modern Hybrid pigs have hardly any fat. However, the GOS has a distinct layer of backfat and marbling within the meat. That layer of backfat means that it is hardy and can be kept outdoors but it also means that when the meat is cooking, it is being basted in its own fat making the meat succulent and full of flavour. Good management and farming of the pigs means that levels of backfat do not need to be excessive. There are now companies, such as the -Traditional Breeds Meat Marketing Company, who work with Accredited Butchers around the country marketing meat from pure bred rare and traditional breeds. To be show pigs these pigs need to show the best characteristics of their breed. They must have at least one black spot and lop ears that cover much of the face as well as good proportions for meat production. Picture taken at Oak House Farm May 2007.
